Ingredients
1/2 cup cooked quinoa or yams
1/4 avocado
1 cup cooked, diced chicken
1/2 bell pepper, sliced
1 cup baby spinach or lettuce
1/2 cup cherry tomatoes, halved
1 tbsp Maple Garlic Dressing (see below)
Preparation
1. Add quinoa or yams to the bottom of a bowl.
2. Top with spinach or lettuce.
3. Add chicken, bell pepper, tomatoes, and avocado.
