Brownies, meet cheesecake. Two of our favourite desserts come together as one. Rich, chocolately brownies and creamy cheesecake swirls are sure to elicit 'oohs' and 'aahs' from anyone lucky enough to try them. 

Ingredients

⅓ cup hot melted unsalted butter or coconut oil
Fudgy Brownie Mix
3 eggs, divided
2 tbsp milk (your choice)
1½ tsp vanilla extract, divided
1 block (8 oz/225 g) cream cheese, softened
¼ cup granulated sugar

Preparation

  1. Preheat oven to 350F. Lightly oil an 8” x 8” baking pan.
  2. In a large bowl, combine butter with mix. Add 2 eggs, milk, and 1 tsp vanilla extract. Stir until well combined. Reserve 2/3 cup of batter and set aside. Scrape remaining batter into oiled 8” pan, spread out evenly.
  3. In small bowl, beat cream cheese with sugar until smooth. Beat in remaining egg and ½ tsp vanilla extract. Pour over batter into pan and smooth out to the edges. 
  4. Using 1 heaping tbsp as a guide, dollop reserved brownie batter over cream cheese mixture. Use a butterknife to cut through the batter to make swirls.
  5. Bake, uncovered for 30 - 35 minutes, or until edges are golden and toothpick comes out mostly clean with a few crumbs on it. Let cool before slicing.
